This is a tempting chocolate cupcake recipe that my cousin taught me. She assured me that this is the best chocolate cupcake recipe she ever had. I am so glad she shared this priceless recipe. So I am calling it SUPER MOIST CHOCOLATE CUPCAKE for it really is a chewey, chocolatey, bitter-sweet cupcake that everybody would want more. Cupcakes created several TV shows like the DC Cupcakes and The Cupcake Girls. Cupcakes are on trend this days. There are local shops dedicated in selling cupcakes only. There are hundreds of thousand of blogs featuring cupcakes. There are millions of online selling of cupcakes from a simple plain cupcake to a very exquisitely designed cupcakes. There is no sign of stopping these little cakes fever. You may also try HEAVENLY MUFFINS. SUPER MOIST CHOCOLATE CUPCAKE 3 cups all-purpose flour 2 1/2cup white sugar 1 cup butter or margarine, softened 1 tbsp. baking soda 1 1/3 cups sour cream 4 eggs, at room temperature 2 tsp. vanilla extract 3/4 cup cocoa powder, diluted in 1/4 cup water and 1 tablespoon sugar 1/2 tsp. salt 1 cup boiling water Combine flour, cocoa, baking soda and salt together. Set aside. Cream sugar and butter in a mixing bowl. Add eggs, one at a time, beating well, after each addition. Beat on high speed until light and fluffy. Add in vanilla. Add alternately the sour cream and flour mixture into creamed mixture. Mix on low just until combined. Stir in water until blended. Pour into paper lined cupcake tins. Bake at 350 degrees for 15-20 minutes or until insterted toothpick comes out clean. Cool in pans for about 10 minutes. Transfer to wire racks to completely cool. Serve your SUPER MOIST CHOCOLATE...

CHOCOLATE CUPCAKE is one of my favorite cupcake variants. I got this perfect CHOCOLATE CUPCAKE recipe from one of my loved baking site, joyofbaking.com. Almost all of its recipe are kitchen-tested which gave me an assurance that I will get the same exact result, as long as I followed the measurements of the ingredients and the procedure. But instead of putting a chocolate butter frosting, I wondered if baking it with marshmallow would do good. I have an extra pack of ZITI PASTA in my shelf after making my BAKED ZITI. With the love I have for pasta, I cannot resist myself cooking them again. I am always pleased with the different recipes I make with my pasta. CHEESY ZITI is a perfect simple family pasta snack and is a fast comfort pasta dish. Cooking Cheesy Ziti requires only about 5 minutes to prepare and 20-30 minutes to be cooked. And for sure, this will only take few minutes to be consumed. If you can’t have enough of CHEESY ZITI, why not try TUNA CARBONARA, BAKED MACARONI or SARDINES PASTA. CHEESY ZITI 500 grams ziti pasta 1 tbsp. butter 1 onion, peeled and minced 1 cup cooked ham, thinly sliced 3 cups spaghetti sauce 1/2 cup tomato sauce 1/2 cup sour cream 1 1/2 cup cheese italian seasoning dried oregano and basil salt pepper sugar Bring a large pot of salted water to boil and add ziti. Cook until al dente. Drain, put in a large bowl and set aside. In a large skillet, melt butter over low heat. Add onion and ham, cook for about 2 minutes. Add spaghetti sauce, tomato sauce, sour cream and cheese, stirring once in a while, cook for 10-12 minutes. Season with italian seasoning, dried oregano, dried basil, salt, pepper and sugar. Cook for another 2-3 minutes. Remove from heat. On a separate large skillet, pour half of the sauce, then add half of the cooked pasta ziti, over low heat, tossing constantly. Still Colby has no classes since Pangasinan is still signal # 1 with typhoon Juaning. we are so thankful that we are not so devastated with rain and wind of Juaning but our prayers to those who are badly affected of the typhoon. Today is a lazy day with the rainy weather but I still want to busy myself in the kitchen. Then a weird hungry voice whispered to my ears, but well it was just my hungry tummy shouting at me to fry a snack for a change. My kids and I usually have cookies, breads and biscuits for merienda but this time we will have vegetables. Yes, vegetables for a snack. LUMPIANG GULAY (Fried Vegetable Lumpia) is a lumpia-wrapped sauteed Baguio vegetables like sayote, Baguio beans, carrots and singkamas (Turnips), and meat. It is great merienda bite and even eaten best with rice. To fight the oily bite, dip the Lumpiang Gulay with vinegar, salt, sugar and onion. I have been long dreaming a home-cooked Lumpiang Gulay but with a mom’s busy day, slicing, wrapping (which is my most tedious part) and lastly frying won’t fit in.
