Yesterday afternoon, while doing some errands I received a text from an unregistered contact which reads: Good Afternoon. This is Goya from Virtusio PR. We would like to invite HungryNez to a Thanksgiving Dinner. May we have your email add so we can send you the invitation. Thank You. It was a nice and neat text invitation. Since I was not at home, very eager I was, I asked my friend to check if the company is legit, and he said yes, it is legit. Unless the text is not. Whew! This is my very first to receive an invitation through my blog and I do not know much about media and public relation companies so I immediately went back home to check my email. Yup, I have a very pretty and elegant invitation attached to a letter from virtusio.com, a public relations and marketing company. Deliciously tempting! Carrot Raisin Bread

My mom came early this week and I thought it was just a usual visit that she wanted to say hi and check the kids. After a nice lunch, she hesitantly asked me if I could make some of the CARROT RAISIN BREAD like the ones I bake during her golden birthday. After having her saying that, I immediately browsed my picture files and checked blog if I already featured and posted this recipe. And oh yeah, I almost missed sharing this one. CARROT RAISIN BREAD has been hiding in my file for almost a year now. Everybody is always amazed with my CARROT RAISIN BREAD. And I want to give credit to my food blogger friend who I already mentioned in my previous CARROT WALNUT BREAD post. I just recreated the recipe by removing the crushed pineapples and walnuts. At first taste, I got worried for I might not have the same texture and taste but it was still at its best for a simpler and inexpensive dessert feast. CHOCOLATE CUPCAKE is one of my favorite cupcake variants. I got this perfect CHOCOLATE CUPCAKE recipe from one of my loved baking site, joyofbaking.com. PINAKBET ILOCANO or PAKBET ILOCANO is the most award winning Pinoy vegetable recipe. It is usually served as in accompaniment to a fried or grilled meat or fish dishes. It is a combination of native eggplant, okra and ampalaya. Native vegetables are those which are usually small in size and grown by small farmers. But you can use the vegetables listed below that available in your local wet good market. There are many ways of cooking Pinakbet, some saute it, some cook it with shrimp paste or alamang, some add tomato sauce and some add soy sauce. But my best way in cooking Pinakbet is the Ilocano’s method and using the native vegetable ingredients. Here in Ilocos region, particularly in our province, Pangasinan, you can find the best bagoong or fish paste which is the ultimate secret in making a sumptuous and flavorful Pinakbet recipe. I think this is best for me because I got to acquire the flavor of fish paste in our dishes which I think is not so preferred by some. Well, I get to cook this vegetable dish since my kids, my husband and I are not so picky with vegetables. But it took me some time to let my kids get used to vegetables, teaching them the benefit of eating them. Pinakbet is also similar to Dinengdeng, but the latter is more of leafy vegetables into it. Ampalaya or bitter gourd is great for it is rich in iron and is considered as the best medicinal vegetable in our country. It is beneficial for those who are diabetic. Sinigang na Bangus (Milkfish in Sour Soup)...

Cooking SINIGANG is such an instant with the help of tamarind soup base which is available in almost all grocery stores. But if you want a natural experience of sinigang, you may use lots of tamarind or kamias or tomatoes. You may also use miso and guavas. But even I am stay-at-home mom, I rather use the instant mix because its convenient and a lot cheaper. You can also cook almost all kinds of meats with sinigang mix like pork, shrimp, beef and chicken. Sinigang is cooked best with some native vegetables in it like, onions, tomatoes, string beans, kangkong or river spinach, radish, eggplant, and okra. Well, it doesn’t mean you have to dunk all those vegetables in the pot. You may choose about 2-4 combination of vegetables to make it more nutritious. You can also add sliced gabi to make the soup thick, but for me, using gabi for sinigang dish is good for meats and not for seafood sinigang. Some cook their sinigang by sauteing or frying the onions and tomatoes, which I haven’t tried that yet. But for people of Dagupan, where our Bangus is the best tasting in the world, need no to saute to remove the fishy taste, merely boiling our very own Dagupan Bangus with onions and tomatoes will do the trick for having the best tasting Sinigang na Bangus. Make sure you serve your Sinigang dish while hot as a comforting main dish of Filipinos. Do not put too much water in the pot for Sinigang dish for it will just make your soup taste bland, about a liter for every kilo of meat or seafood is best. I love all kinds of desserts. Salads, pies, cakes, tarts, puddings, fritters, pastries, brownies, ice creams, doughnuts, oh, meal will never be complete without a dessert! Even a plain sliced apple or a peeled banana will wrap my meal perfect. BANANA SAGO MAMBO SALAD is one of my favorite desserts. I remember that this dessert recipe is used to be prepared by my Aunt each time my sister and I would visit them and play with our cousins. It is a quick and easy to prepare dessert that everybody, including kids will surely love. You can use different kinds of colors of sago or tapioca pearls to make it more fun and exciting for kids to feast. There are shops particularly in wet markets that sell pre-cooked sago so you will not spend time cooking them. Unless you prefer boiling them about 3-4 hours and that is so tiresome for an easy to make and easy to eat BANANA SAGO MAMBO SALAD. This dessert is such an amazing because it is healthy since it is a fruity dessert, it has milk in it and a minimal amount of sugar. You may also omit sugar if you want to since the banana will already sweeten the milk. BANANA SAGO MAMBO SALAD 10 to 12 pieces banana saba or any banana you prefer 1 liter water 1 cup white sugar 1 big can evaporated milk 1/2 cup all-purpose Nestle cream 2-3 cups sago or tapioca pearls, boiled and washed Peel each banana and slice them to bite sizes. LEMONY ZESTY BREAD DAY! I’ve been busy the past few days but I don’t want to leave the week without posting here! Well, this is really quick for I have to meet my professor in a little while. Yup, I’m enrolled and back to school again. It’s a lot of fun spending my weekends with teachers and squeezing juice in my brains. Ugh, that’s gross! Anyway, I have this recipe for those who wanted to spend some time in the kitchen, baking some quick breads. This is a best recipe if you are just a newbie in the kitchen. I am sure you won’t have a kitchen disaster with this LEMON BREAD recipe unless you forgot to turn on the oven or turn it off. I added a bit of grated carrots to add color on the bread and a handful of raisin to make it healthier. LEMON BREAD 1 1/2 cup cake flour 1 cup white sugar 1 tsp. baking powder pinch of salt 1 large egg 1 cup milk 1/2 cup vegetable oil 1 large grated lemon zest 1/2 cup grated carrots 1/2 cup raisins powdered sugar In a bowl, mix cake flour, sugar, baking powder and salt. set aside. Not only delicious but nutritious too. Just as what they say, an apple a day, keeps the doctor away. Apples are rich in alpha-hydroxy acids which are best in removing off old skin and helps reveal fresh new skin. It also contains pectins that firms and tightens saggy skin like fine wrinkles. Apples are not only great on skin but also for your teeth and breath. To fight breath problems, you can eat apples before going to bed. It also helps you lessen the oil on your skin. For an Apple Mask, grate fresh apple and add honey. Apply on your washed face and leave for 10 minutes. Then, rinse with water. I have an extra pack of ZITI PASTA in my shelf after making my BAKED ZITI. With the love I have for pasta, I cannot resist myself cooking them again. I am always pleased with the different recipes I make with my pasta. CHEESY ZITI is a perfect simple family pasta snack and is a fast comfort pasta dish. Cooking Cheesy Ziti requires only about 5 minutes to prepare and 20-30 minutes to be cooked. And for sure, this will only take few minutes to be consumed. If you can’t have enough of CHEESY ZITI, why not try TUNA CARBONARA, BAKED MACARONI or SARDINES PASTA. CHEESY ZITI 500 grams ziti pasta 1 tbsp. butter 1 onion, peeled and minced 1 cup cooked ham, thinly sliced 3 cups spaghetti sauce 1/2 cup tomato sauce 1/2 cup sour cream 1 1/2 cup cheese italian seasoning dried oregano and basil salt pepper sugar Bring a large pot of salted water to boil and add ziti. Cook until al dente. Drain, put in a large bowl and set aside. In a large skillet, melt butter over low heat. Add onion and ham, cook for about 2 minutes. Add spaghetti sauce, tomato sauce, sour cream and cheese, stirring once in a while, cook for 10-12 minutes. Season with italian seasoning, dried oregano, dried basil, salt, pepper and sugar. Cook for another 2-3 minutes. Remove from heat. On a separate large skillet, pour half of the sauce, then add half of the cooked pasta ziti, over low heat, tossing constantly. Then add the remaining sauce and pasta. Cook for about 5 minutes until pasta and sauce are well-mixed. Remove from fire. Then serve your CHEESY ZITI while hot. Carrot Walnut Bread

I love baking quick breads. Well, because I haven’t tried baking breads using yeasts, I am not so prepared with the hand-work of kneading doughs. But it is already in line if time allows me to. Baking CARROT WALNUT BREAD is the quickest bread you can prepare and bake in your oven. I got this recipe from a friend who is very diligent in tutoring me in baking and even so thoughtful of sending me these walnuts from US. I didn’t notice that I ran out of crushed pineapple but my carrot walnut bread minus the crushed pineapples tastes even great. I grew up just knowing two kinds of nuts, peanuts and cashew nuts. I just got acquainted with nuts like walnuts, pistachios, almond and hazelnuts when I started baking, cooking and blogging. Walnuts are edible seeds from a tree of genus Juglans. I don’t know those are, hihi. But you can search in google for that. They are rich in anti-oxidants and is best to improve body fat in overweight adults. Walnuts are quite pricy in our country but they can be bought in small packages in some stores. Walnuts are best in carrot bread but if don’t have extra money to buy walnuts, you can use cashew nuts instead, or just top the Carrot Bread batter with chopped peanuts.   You may also try baking my other carrot bread recipes like CARROT BAR and PINEAPPLE CARROT MUFFINS. Sun came out today ! And it is pretty hot right now after the cold and rainy days that were warmed by soups and baking. Perfect time for roasting, grilling and frying with this kind of weather. So instead of cooking a nourishing Chicken Tinola, I made this BREADED CHICKEN FILLET and poured with easy and tasty MUSHROOM SAUCE. Chicken Fillet is a chicken breast piece with no bone or rib in it. Just plainly a chicken meat. Chicken fillet is lean and is more faster to cook. It is very easy to fillet a chicken meat from its breast. Just cut or slice the breast from the chicken. Then cut the fleshy meat part of the breast. And you may slice the chicken fillet according to your desired sizes. Just make sure to slice them in even or uniformed sizes. You may also cut your chicken fillets into thin strips so it will be cooked thoroughly and faster. Using a non-stick pan or skillet is better in frying a chicken fillet as to reduce the amount of oil or fat to be used. I also suggest you fry your chicken fillet with its skin on for a more flavorful fillet, then you can just remove the skin later if you are not into eating chicken skin. Lastly, leave about a half inch space between your chicken fillets while frying to cook them evenly and to have a perfect brown chicken fillets.
