Ham and Egg Rice

ham and egg rice

As a working mom, I always try to juggle everything from house to office, so most of the time food ought to be quick and easy to prepare particularly during breakfasts. But instead of the cooking and serving the conventional ham, egg and fried rice separately, I assembled them into one hefty meal. The following are the ingredients, however, you may add more ham or eggs if you have bigger tummies to fill in.

2 tbsp. butter
1 onion minced
4 sliced ham
3 eggs
3 cups cooked rice, break into individual grains
4 tbsp. oyster sauce
1 tsp. soy sauce
Salt
Pepper

1.Heat a tablespoon of butter in a pan or wok. Fry ham. Remove from pan when slightly done, slice diagonally and set aside.
2.Lightly beat the eggs and add pinch of salt and pepper. On the same pan, fry eggs. When done, remove from pan then slice eggs diagonally and set aside.
3.Pour the remaining butter on same wok. Slightly sauté onions, half of the sliced ham and eggs. Add oyster sauce and soy sauce and cooked rice. For ten minutes, quickly toss and turn the rice in a medium-high heat. Add salt and pepper according to taste. Then remove from heat.
4.Transfer fried rice on a serving dish. Assemble the remaining ham and eggs on top. Then serve.
