Corned Beef and Potato Soup


As a working mom, life is truly a non-stop and jam-packed of activities. I sometimes jump from one place to another, from house to Colby’s school, then grocery during lunch breaks, back to office till 5, market or church meetings or social gatherings like birthdays or an emergency and not-so-emergency meeting with a friend. While some mom would settle from some fast food feast, I still opt for a home-cooked meal that is quick and easy even if I arrive home a little late.

CORNED BEEF AND POTATO SOUP
is one of Pinoy’s famous quick and easy dishes for lunch and dinner. Though some would oppose to my idea of serving canned food, I rather serve my family a home-cooked dish than buying an expensive fastfood meal loaded with food and flavor enhancers. Well, I think canned food is just good as long as it is airtight and bought from a company you trust like Purefoods which is but quite expensive compared to other canned food products, but assures the best quality of food you bought in their can.

CORNED BEEF AND POTATO SOUP

1 can Purefoods (or any other brand) corned beef
2-3 medium potatoes, peeled and minced
1 medium onion, peeled and sliced
2 clove garlic, peeled and crushed
1 medium red tomato, quartered
2 finger chilies or siling haba
1/2 – 1 cup water
salt
pepper
cooking oil

Heat oil in a skillet. Saute garlic, onion and tomatoes. Add corned beef. Cook for about a minute. Then add minced potatoes. cook for 2 minutes, stirring constantly. Add water according to your desired amount of soup. But don’t put too much water because you might lose the flavor. Bring to slow simmer and cook until potatoes are cooked. Add finger chilies, salt and pepper. Remove from fire and serve your Corned Beef and Potato Soup!
