Scrambled Egg with French Fries

As any mother would say, simpler is better. And nothing beats the stress-free cooking of a SCRAMBLED EGG. I added a handful of French fries to add an appeal to my 4 year old son, Colby, who loves fries. SCRAMBLED EGG WITH FRENCH FRIES 1 teaspoon unsalted butter or cooking oil 2 large eggs 1 tablespoon milk salt and ground black pepper to taste cooked french fries Either heat the butter or oil in a small nonstick...

Sopas (Creamy Chicken Macaroni Soup)

It rained for the past 2 nights and I am thankful the rain somehow helped lessen the warm temperature which was 38 degress Celcius yesterday, the hottest day of the year. Some provinces here in the Philippines like Isabela already reached 40 degrees, whew, that is hot hot hot. I do not know if I am to be happy the summer is about to end because I really do not like rain. I had terribly stressed with the rain last...

Meaty Spaghetti

I cooked MEATY SPAGHETTI this day to break the usual biscuit and cookies we eat for meriendas. Colby has a small complain though with the spaghetti for I forgot to buy cheese to top with it. But he loved it anyway. I prefer spaghetti sauce to have more beef than having the meat just floating on a pool of tomato sauce and I seasoned the sauce a bit sweet to make it friendlier for Colby. MEATY SPAGHETTI Spaghetti...

Scrambled Eggs with White Onions

Breakfast is the most important meal of the day and this start-of-the-day habit should never be missed. We all know the truthfulness of this statement but we also all how difficult it is to prepare a good breakfast, especially for a working mom like me who usually wakes up a bit late and always runs out of time. Breakfast should really be easy and simple to prepare and also to eat. Good thing there are breakfast...

Zesty Hotcake

I am enjoying the long vacation we have for this lenten season – get-together with the family, overnight stay at Baguio, swimming at Leisure Coast Resort, a time of worship, and most especially great meal moments with my family. I had the box of Maya Pancake since December and thankfully, I finally had a time to do the work with HOTCAKES or PANCAKES. Though I made a bit variation to break the traditional...

Ginisang Kamatis (Sauteed Tomatoes)

February is not just a season to celebrate the romantic spell of Valentine’s Day but the time of year to feast with the abundance of tomatoes. Tomatoes are sold in the wet market for only 5 pesos per kilo. Yeah, you read it right, FIVE PESOS per kilo. Some vendors actually even sell the over-ripped ones for only 3 pesos. I arrived home from the market, Royce asked me, “Hindi ba OA ito? (Are you not...

Pineapple Carrot Muffins

A couple of extra carrots, from my Fresh Vegetable Dip, were in the fridge. I pity them for not being consumed yet. Subsequently, I thought of taking them out, peeling them, grating them and baking them for Pineapple Carrot Muffins.  This is an improved version of the first Carrot Bread I posted. I usually do the baking around 5am and spend about an hour in the kitchen. I leave most of my baked goodies at home for...

Ginisang Sardinas (Sauteed Sardines)

I cooked Ginisang Sardinas or Sauteed Sardines with Cabbage last night to go along with the Fried Chicken Necks. I am not a fan of eating sardines from the can. I find it too fishy so I sautee sardines in garlic and onion to remove the fishy smell. 2 tbps. cooking oil 1 medium onion, peeled and chopped 1 clove onion, peeled and minced 1 small cabbage, touch core removed, cut into 1 inch strips 1 can sardines in...

Chocolate Rice Porridge (Champorado)

We have always heard the saying: “Eat your breakfast, it is the most important meal of the day.” And some may think, I often skip breakfast but I don’t feel anything different! Well this article may tell you to think again. In every day’s hassle and rush, a good number of us people tend to succumb to the habit of skipping breakfast. A student rushing to school so not be late for the exams, or a teenager...

Jean’s Sandwich

Jean, one of my officemates, called me one afternoon to have a taste of the sandwich she prepared for our merienda. As soon as I came to her table, I saw 1 loaf of bread and a bowl of brownish thick spread. It was usual for me to see bread for merienda, especially when budget is ran out, but seeing the suggy, thick spread was an alien to my eyes. Being left with no choice, I took a pair of bread. Still my curiosity...
